Paleo Massaged Kale Salad



This Paleo Massaged Kale Salad is a delightful mix of fresh kale, red onion, sweet cranberries, crisp apple slices, and nutty sunflower seeds. The dressing, made with olive oil and apple cider vinegar, adds a tangy and slightly sweet flavor that complements the ingredients perfectly. Massaging the kale leaves not only makes them more tender but also enhances the overall texture and taste of this nutritious salad.

Ingredients:

  • 1 bunch of kale, stems removed and leaves torn into bite-sized pieces
  • 1/2 red onion, thinly sliced
  • 1/2 cup dried cranberries
  • 1 apple, thinly sliced
  • 1/4 cup sunflower seeds
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey optional
  • Salt and pepper to taste

Instructions:

Tossed kale leaves, thinly sliced red onion, dried cranberries, apple slices, and sunflower seeds should all be combined in a big salad bowl

Mix the olive oil, apple cider vinegar, honey if desired, and a small amount of salt and pepper in a small bowl

Over the kale salad ingredients, drizzle the dressing

For two to three minutes, use your hands to gently massage the kale leaves until they start to wilt and soften

This makes the kale more palatable and helps to tenderize it
