These gluten-free broccoli cheddar quinoa bites are a delicious and nutritious snack or appetizer option. Packed with protein from quinoa and cheese, and loaded with the goodness of broccoli, they make for a satisfying and flavorful treat.
Ingredients:
- 2 cups cooked quinoa
- 2 cups finely chopped broccoli florets
- 1 cup shredded cheddar cheese
- 2 large eggs
- 1/4 cup gluten-free breadcrumbs
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
Instructions:
Preheat your oven to 375F 190C
In a large mixing bowl, combine cooked quinoa, chopped broccoli, shredded cheddar cheese, eggs, gluten-free breadcrumbs, garlic powder, onion powder, salt, and pepper
Mix well until all ingredients are evenly distributed
Grease a mini muffin tin with cooking spray or oil
Spoon the quinoa mixture into each muffin cup, filling them to the top and pressing down gently to pack the mixture
Bake in the preheated oven for 20-25 minutes, or until the bites are set and lightly golden on top
Allow the quinoa bites to cool in the muffin tin for a few minutes before carefully removing them with a spoon
