Red, White, and Blue Potato Salad



The red, white, and blue color scheme in this potato salad makes it more patriotic. It looks great and tastes great because it's made with red, white, and blue/purple potatoes. Ingredients:

  • 1 pound red potatoes, diced
  • 1 pound white potatoes, diced
  • 1/2 pound blue/purple potatoes, diced
  • 1/2 cup mayonnaise vegan mayo for vegan option
  • 2 tablespoons Dijon mustard
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/2 cup diced celery
  • Salt and pepper to taste

Instructions:

For about 10 to 12 minutes, cook the red, white, and blue potatoes in separate pots until they are soft enough to pierce with a fork

Let it cool down after draining

Put the mayonnaise and Dijon mustard in a large bowl and mix them together

Combine well

Cut up the celery, red onion, parsley, and chives and add them to the mayonnaise

Use a stir to mix

After the potatoes have cooled, add them to the dressing mixture slowly so they don't break

Add salt and pepper to the salad as needed

Put the potato salad in the fridge for at least two hours before you serve it so that the flavors can mix
