A vegan broccoli soup that is creamy and full of flavor that can be made easily in a mug using the microwave.
Ingredients:
- 1 cup chopped broccoli
- 1/2 cup vegetable broth
- 1/4 cup unsweetened almond milk
- 1 tablespoon nutritional yeast
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
Put chopped broccoli and vegetable broth in a mug that can go in the microwave
Heat broccoli in a microwave on high for two minutes, or until it's soft
Mash or blend the broccoli with a fork or blender until you get the consistency you want
Add the nutritional yeast, garlic powder, salt, and pepper, and mix them in
Add one to two more minutes in the microwave until everything is hot
Before serving, stir it up well
